In the Kitchen with Heidi Swanson's "Super Natural Every Day" Warm Cabbage + Sweet Potato Bowl

I've had a major girl crush on Heidi Swanson from 101 Cookbooks ever since my sister got me hooked on her blog years ago. It was really Heidi's photography that hooked me but, after I made one dish fan girl status ensued. Vegetarian + whole-food minded, Heidi knows how to make a meal homey + light. I have loved her book, Super Natural Every Day, for years + one of my favorite recipes is her White Beans + Cabbage dish. I'm giving you my take on this baby today!

Warm Cabbage + Sweet Potato Bowl

This dish is cozy, yummy + full of health

Today's recipe is the perfect bowl of yum on a stormy + chilly day. I've made some slight edits to Heidi's original version, but I think you'll find it satisfactory : ) I swapped out potatoes with sweet potatoes to add some sweetness. I also had some extra kale lying around so I threw some leaves in there. It adds more greenery to the dish, which I always love.

Heidi suggests topping the dish off with cheese but, I always love to add a fried or poached egg + some hot sauce. Mmm...

Ingredients

| Makes 2 bowls | 

  • 4 oz sweet potatoes, peeled + diced
  • 1 shallot, finely chopped
  • 1 15 oz can white beans (I used great northern beans), drained + rinsed
  • 2 cups green cabbage, finely shredded
  • 1 cup lacinato kale, finely shredded
  • 3 tbsp extra-virgin olive oil (evoo)
  • Coarse sea salt 
  • 1 tsp chives, chopped
  • 2 eggs, fried or poached
  • Hot sauce (I used Cimino Pepper Sauce)

Directions

step 1

Heat the evoo in a cast-iron pan. Once hot, add sweet potatoes + lay flat to cook evenly for 8-10 minutes. Occasionally stir sweet potatoes to get all sides cooked + browned.

Once sweet potatoes are browned add shallots, beans, + salt. Toss + cook until beans are browned. Remember to scrape the bottom of the pan while cooking. Those are the tasty bits!

Add cabbage + kale to pan + cook until wilted. I usually add a touch more evoo at this point + some extra salt. 

step 4

Once the greens wilt, turn heat off from pan. Cook up an egg + toss it in your bowl with the potato + cabbage mixture. Top it off with some hot sauce + chopped chives. Dig in!
